Oake Manor’s Chicken Curry

Ingredients

2 Chicken Breasts (Diced)

1 Onion (Diced)

3 Cloves of Garlic (Finely Chopped)

15g Fresh Coriander (Chopped)

1 Serving Spoon of Jalfrezi Paste

1 tsp of Curry Powder (However, mild of spicy you like)

½ tsp of Cumin

½ tsp of Ground Turmeric

1 tsp of Olive Oil

100ml Single Cream or Double Cream

1 Heaped tsp of Mango Chutney (Optional)

2 Tins of Chopped Tomato’s

 Rice

1 Cup of Basmati Rice

6 Cups of Boiling Water

Method

1.       Get a saucepan and add the olive oil

2.       Then, sweat your onions and garlic until soft

3.       Add the diced chicken and cook until white all over

4.       Next, add the Jalfrezi paste, curry powder, garam masala, cumin, turmeric and a tsp of cold water and let it turn into a paste

5.       Cook this lightly for 2 minutes

6.       Add in your chopped tomato’s and cream and bring to a boil.

7.       Let this simmer for 10 minutes

8.       Then, add in the coriander and mango chutney and let this simmer for another ten minutes

9.       Start cooking the rice by bringing the water to a boil, then adding the rice. Let this cook for 15 minutes and then strain through a sieve

To Serve

Place rice on 2 plates and make a well in the middle. Add the curry to the well. Finish by sprinkling fresh coriander over the dish.
